Ingredients

  • 80g Fior di Vita mozzarella light
  • 4 bread slices, halved
  • 1 egg
  • 80ml milk
  • Pesto sauce
  • All-purpose (plain) flour, for dusting
  • Breadcrumbs for dusting
  • 50ml Golden Drop sunflower oil
  • Salt and pepper

Instructions

  1. Place the slices of mozzarella on half the slices of bread.
  2. Top with pesto sauce.
  3. Beat the eggs in a shallow dish with the milk and season with salt and pepper.
  4. Dust the sandwiches with flour and place in the beaten eggs.
  5. Press down gently for a few seconds until they have absorbed some of the mixture.
  6. Dust the sandwiches with breadcrumbs.
  7. Heat the oil in a frying pan or skillet.
  8. Add the sandwiches, and cook for about 2 minutes on each side, until crisp and golden brown.
  9. Remove with a slotted spatula and drain on paper towels.
