Ingredients
- 80g Fior di Vita mozzarella light
- 4 bread slices, halved
- 1 egg
- 80ml milk
- Pesto sauce
- All-purpose (plain) flour, for dusting
- Breadcrumbs for dusting
- 50ml Golden Drop sunflower oil
- Salt and pepper
Instructions
- Place the slices of mozzarella on half the slices of bread.
- Top with pesto sauce.
- Beat the eggs in a shallow dish with the milk and season with salt and pepper.
- Dust the sandwiches with flour and place in the beaten eggs.
- Press down gently for a few seconds until they have absorbed some of the mixture.
- Dust the sandwiches with breadcrumbs.
- Heat the oil in a frying pan or skillet.
- Add the sandwiches, and cook for about 2 minutes on each side, until crisp and golden brown.
- Remove with a slotted spatula and drain on paper towels.
