Ingredients
- 2 eggs, beaten
- 200g makku
- 1 onion
- 2 garlic cloves
- Mint
- Parsley
- Salt and pepper
- Golden Drop olive oil
- Kuhne Italian dressing
Instructions
- Beat the eggs well.
- Add whitebait and season with salt and pepper. Mix well.
- Heat some olive oil and add onion and garlic.
- Cook until golden and add them to the whitebait mixture.
- Add parsley and mint and mix well.
- Drop big spoonfuls of the whitebait mixture into a hot saucepan with some olive oil.
- The whitebait should be cooked like pancakes, frying them once on each side.
- Serve the fritters immediately while still hot with a squeeze of lemon juice over the fritters and Kuhne Italian Dressing for that extra kick.
