Ingredients

  • 2 eggs, beaten
  • 200g makku
  • 1 onion
  • 2 garlic cloves
  • Mint
  • Parsley
  • Salt and pepper
  • Golden Drop olive oil
  • Kuhne Italian dressing

Instructions

  1. Beat the eggs well.
  2. Add whitebait and season with salt and pepper. Mix well.
  3. Heat some olive oil and add onion and garlic.
  4. Cook until golden and add them to the whitebait mixture.
  5. Add parsley and mint and mix well.
  6. Drop big spoonfuls of the whitebait mixture into a hot saucepan with some olive oil.
  7. The whitebait should be cooked like pancakes, frying them once on each side.
  8. Serve the fritters immediately while still hot with a squeeze of lemon juice over the fritters and Kuhne Italian Dressing for that extra kick.
