Ingredients

  • 400g Fior di Vita mozzarella (sliced into 10-12 pieces)
  • 2 eggs (whisked)
  • 1/2 cup cornstarch
  • 3/4 cup Italian breadcrumbs
  • 1/2 cup marinara sauce (for dipping)
  • 1-2 cups sunflower oil (for frying)
  • Salt and pepper to taste

Instructions

  1. Slice the mozzarella into 10-12 even pieces, about 1 cm thick.
  2. Prepare three shallow bowls: one with cornstarch, one with whisked eggs, and one with Italian breadcrumbs.
  3. Coat each mozzarella slice first in cornstarch, then dip it into the whisked eggs, and finally coat it evenly with breadcrumbs. Repeat the process for a double coating if desired.
  4. Heat sunflower oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
  5. Carefully place the breaded mozzarella slices into the hot oil, frying in batches to avoid overcrowding.
  6. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove the fried mozzarella slices with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Season lightly with salt and pepper while still hot.
  9. Serve immediately with marinara sauce for dipping.
