Ingredients
- 400g Fior di Vita mozzarella (sliced into 10-12 pieces)
- 2 eggs (whisked)
- 1/2 cup cornstarch
- 3/4 cup Italian breadcrumbs
- 1/2 cup marinara sauce (for dipping)
- 1-2 cups sunflower oil (for frying)
- Salt and pepper to taste
Instructions
- Slice the mozzarella into 10-12 even pieces, about 1 cm thick.
- Prepare three shallow bowls: one with cornstarch, one with whisked eggs, and one with Italian breadcrumbs.
- Coat each mozzarella slice first in cornstarch, then dip it into the whisked eggs, and finally coat it evenly with breadcrumbs. Repeat the process for a double coating if desired.
- Heat sunflower oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
- Carefully place the breaded mozzarella slices into the hot oil, frying in batches to avoid overcrowding.
- Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fried mozzarella slices with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Season lightly with salt and pepper while still hot.
- Serve immediately with marinara sauce for dipping.
