Ingredients

  • 2 Maltese sausages
  • 1 tsp chopped parsley
  • 2 hard/soft boiled eggs
  • 100g breadcrumbs
  • 50g plain flour, seasoned
  • 2 eggs, beaten
  • Golden Drop sunflower oil
  • Kuhne vinaigrette
  • Rucola
  • Sun-dried tomatoes

Instructions

  1. Remove sausage from casing.
  2. In a bowl, break up the sausage meat with a fork.
  3. Mix the parsley into the sausage meat, then divide the sausage meat into 2 even-sized portions.
  4. Flatten into a rough circle.
  5. Wrap around the boiled eggs, encompassing completely.
  6. Dip each one in flour, egg, and then breadcrumbs, re-shape into a round.
  7. Heat the sunflower oil to 160°C and deep fry for 8 to 10 minutes, until golden and crispy.
  8. Drain onto kitchen paper.
  9. Serve accompanied with rucola and sun-dried tomatoes.
  10. Drizzle with some Kuhne vinaigrette.
