Ingredients
- 1 Acqua & Farina pizza dough
- 1 potato, peeled and cut into small cubes
- 200g Maltese sausage without the skin
- 1 onion, thinly sliced
- 1 sweet red pepper (capsicum), thinly sliced
- 3 eggs, scrambled
- 200g Hello-V 100% vegan mozzarella flavour
- Chilli flakes
- 1 egg beaten with 2 tbsp water (egg wash)
Instructions
- Heat a large frying pan over moderate heat and add the sausage, onion, and potato.
- Stir constantly with a wooden spoon and at the same time crumble the sausage; about 5 minutes.
- Add the sweet red pepper and continue to stir for about 3 more minutes.
- Add the eggs and continue to mix until combined, then remove the pan from the heat.
- Add the cheddar or mozzarella cheese and freshly ground pepper, and mix.
- Roll out the pizza dough and cut out circles of about 12 cm.
- Spread the filling mixture in the middle of each circle and brush the circle with the egg and water mixture.
- Fold half of the dough circle over the other half to form a half circle and enclose the filling inside.
- Pinch the edges with a fork to seal and place them on the prepared tray.
- Brush the tops with the egg and water mixture.
- Bake for about 20 minutes or until you see that the pizzas have taken on a golden color.
