Ingredients
- 1 day-old Maltese Bread
- Tomato paste (kunserva)
- 1 grilled aubergine, cut in slices
- 2 grilled zucchini, cut in slices
- Fior di Vita pepato cheese slices
- Fresh tomato slices
- Grilled red and yellow capsicum
- FOS Greek kalamata sliced olives
- Vitaly’s capers
- Sun-dried tomatoes
- Golden Drop Olive Oil
Instructions
- Cut the top part of the bread and put it aside.
- Remove the inside.
- Spread the inside with tomato paste.
- Add the first layer of aubergines, followed by zucchini, pepato cheese, tomatoes, capsicum, olives, and capers.
- Repeat with remaining veg.
- Finally, add some sun-dried tomatoes.
- Put the lid back on.
- Rub bread with olive oil.
- Bake for 15 minutes at 170°C.
- Cut in half and serve.
